Though our cardoon thistle is a faux impression, cardoon, with an artichoke-like flavor, was popular in ancient Greek, Roman, and Persian cuisine, and through the medieval and early modern periods in Europe, as well as in colonial America. Cardoon is still cultivated for food in southern Europe and northwestern Africa.

The bright yellow color is a great choice for Spring and Summer floral arrangements; we like it best when paired with our faux dandelion spray.
